Hi ! Here’s the recipe for a simple and delicious fruity tart. I made four individual tarts, but you can also make a bigger version. The raw crust made with nuts and coconut butter is a perfect match to the mango cream and the fresh fruit brunoise.
Ingredients (for 4 individual tarts)
1\2 cup apple juice
3\4 cup ground almonds
3\4 cup ground hazelnuts
2 C coconut butter
3 C agave syrup
1 c vanilla powder
2 c agar-agar
shredded coconut, to garnish
To make the crust, heat the coconut butter in the microwave or in a bain-marie to liquify it. Then simply mix the ground nuts, the coconut butter, 1 C agave syrup. The mixture has to be moist enough to stick together.
Press the mixture with your hands in the tart mold or in the pastry ring. Put in the fridge.
Peel 1 1\2 mango and roughly chop it in cubes. Then blend it with the apple juice, pour in a saucepan with 2C agave syrup and the vanilla powder and bring to boil. Add the agar-agar, mix well and let simmer for 5 minutes. Pour in a container and let sit in the fridge until it solidifies. Once it’s solid, blend the mixture again to obtain a creamy texture.
Chop the remaining mango and the kiwis in a brunoise.
Take the crust out of the fridge. Pour the cream on the crust and level it with a spoon. Add the chopped fruits and garnish with some shredded coconut and some vanilla powder. Enjoy !
