Hello ! It’s a cold winter day in Paris, perfect to turn the oven on and prepare these Coconut and Matcha tea muffins. Even if I’d already had the opportunity to taste Matcha Tea, it’s only been since my trip to Japan last summer that I’ve really become addicted to it ! This intensely green, slightly bitter powder is for me the perfect ingredient for a vegan dessert. Matcha cakes and puddings are never extremely sweet, therefore you can really appreciate their taste 🙂
Ingredients (makes 8-10 muffins)
2 cups all-purpose flour
1 1\2 cups shredded coconut
2 C Matcha tea powder
1\2 cup organic sunflower oil
1 cup rice milk
2 C baking powder
1 c baking soda
1\3 cup organic brown sugar
the zest of a lemon
a pince of salt
In a bowl mix all the dry ingredients except from the Matcha powder and the salt. Add the wet ingredients and mix well.
Then add the salt and the Matcha powder. Stir well until the mixture gets a nice green colour. Pour into some muffins mold after having oiled the bottom.
Cook at 180 ° for 20-25 minutes. Let the muffins cool down, take them out of the molds and enjoy !
