Hi ! Do you know Gnudi, a traditional recipe from Tuscany ? Gnudi, in the Tuscan dialect “naked”, got their name because they remind of Ravioli filling, but without the pasta. They are traditionally prepared avec ricotta, parmesan, eggs and spinach. Their flavour is enhanced by the use of lemon, nutmeg, black pepper and Tahin. Here’s my vegan recipe, with no animal products.
Ingredients for 4 people :
150 gr steamed spinach
about 50 gr cashew meal
organic white flour
Prepare some Tofu Ricotta following the recipe, but add 150 gr more spinach.
Ground the cashews into a fine meal and add it to the mixture little by little, until it gets dryer. This ingredients will make the balls more compact and it won’t allow them to break during cooking. Form the balls.
Bring a big quantity of water to boil. Let the gnudi cook, few at a time to avoid breaking, for 4-5 minutes or until they float to the surface.
Serve them hot, with tomato sauce.
