Hi ! You already know it, but I’ll say it again : I love Matcha tea and the desserts that can be made with it 😀
Here’s a yummy recipe for Matcha tea cookies with vegan white chocolate. These cookies are crisp on the edges and soft in the center, thanks to coconut oil and cashew butter.
Ingredients for 7-8 cookies :
200 gr all-purpose flour
80 ml coconut oil
1 c baking powder
1\2 c baking soda
a pince of salt
100 gr organic brown sugar
100 ml soy milk
3 C Cashew butter
2 c Matcha tea powder
1\2 c vanilla powder
1\2 cup white vegan chocolate chunks
In a bowl, mix the flour, the baking powder, baking soda and salt.
In another bowl, whisk the sugar, melted coconut oil, cashew butter, soy milk, vanilla and Matcha tea powder. Add the chocolate chunks and mix well.
Line a tray with a baking sheet. Using a biscuit mold, form the cookies. If necessary, level them with your fingers. Leave some space between the cookies, because they will grow considerably. Garnish with some chocolate chunks.
Cook for 8-10 minutes at 200°. The cookies are ready when the edges start to be golden. Enjoy 😀
