Hi ! Spring has finally come to Paris, and with it all the ingredients that are seasonal in May : asparagus, fava bean, artichokes, green peas … A friend of mine gave me a big bunch of wild garlic, freshly picked in the countryside, so here’s the recipe for a very tasty and quick springtime rice :
250 gr green asparagus
1 cm ginger
a garlic clove
50 gr wild garlic
olive oil, sea salt, black pepper
Basmathi ot Thai rice
Clean all the vegetable, peel the garlic and the ginger.
Cut the leek in approximately 1 cm pieces, finely chop the garlic and the ginger, roughly chop the wild garlic. Cut the asparagus in approximately 1/2 cm pieces.
Using a large pan, heat some olive oil. Then add the leeks and a pince of salt and let sweat fot 3-4 minutes. Then add the ginger and the garlic and let cook for 1 minute. Then add the asparagus and cook until tender. To avoid sticking, add some water and some Tamari while cooking. Add some black pepper.
Stir the wild garlic in and cook for 1-2 minutes.
Cook the rice following the manufacturer’s instructions on the package.
Serve the rice topped with the vegetable and sprinkle with gomasio or nutritional yeast. Enjoy !
