I’m very happy to share with you my recipe to prepare some gluten free vegan homemade bread.
I’ve always loved bread. I grew up in Tuscany where bread and oil are basically sacred. Almost every meal would include one or both of these magical ingredients.
While growing up, I’ve opened myself to many other culinary influences, and my habits have gradually changed to include different types of food.
Nevertheless, I still consider bread as a great choice for a quick meal, an afternoon snack or an aperitif. The versatility of it makes it an extremely useful ally for the everyday kitchen.
Although I’m not allergic to gluten, in the last years I’ve had to limit its consumption a lot.
Even if I can still sometimes enjoy a nice traditional pasta or a perfectly cooked pizza, I know that I have to vary my food as much as I can.
Coming back from my last holiday in Italy, I’ve decided to create my own gluten free and vegan bread recipe.
Although gluten free baking is not difficult in itself, you’ll have to take into account that you’ll need a bigger amount of ingredients than in regular baking.
Once you’ll have stocked your pantry with a choice of different types of gluten free flour you’ll be able to test and create your own gluten free mix.
Ingredients for a 500 gr bread loaf :
200 gr wholemeal rice flour
100 gr buckwheat flour
100 gr quinoa flour
100 gr cornstarch
2 teaspoons psyllium
10 gr salt
2 tablespoons olive oil
9-10 gr baker’s yeast
450 gr filtered water
3 tablespoons seeds (here flax and sunflower) + some to garnish
Mix the flours, the seeds and the psyllium in a bowl or using a food processor.
Then add the yeast, the oil, the salt and the water. Mix well.
The texture of your dough will be fairly liquid.
Pour the mixture in a bread or cake mould that you’ll have beforehand greased with oil or lined with baking sheets.
Garnish with a bit of seeds.
Let rise for a couple of hours in a warm place. The dough should almost double in volume.
Let cook the bread for 45-50 minutes at 190°.
Take it out from the mould and let it cool down completely before eating.
