Hi ! Yesterday evening I was craving a little dessert and I had a lot of tiny juicy organic apples that were just perfectly ripe. So I came up with this delicious muffins recipe.
I used only whole wheat flour, much easier to digest, and muscovado sugar, a delicious unrefined sugar from the Philippines.
Here’s the recipe for 12-15 muffins :
300 gr whole wheat organic flour
120 gr muscovado sugar
100 gr sunflower oil
1 tablespoon cashew (or other nut) butter
100 gr almond (or other plant-based) milk
a mix of spices : vanilla, cinnamon, cardamom and a clove
a pince of salt
the zest of an organic lemon
1 bag of baking powder
1 teaspoon baking soda
3 organic apples
Wash the apples and cut them into small 1 cm cubes. In a bowl, mix all the ingredients apart from the milk and the apples and stir well. Then add the milk, little by little. The dough should be quite liquid but not completely runny.
Add the apples and stir well. Pour the dough in some muffins trays and sprinkle some muscovado sugar on the top to caramelise the crust.
Bake au 200° for about 12-14 minutes.
